Bulk Chocolate from Ecuador: Two Ways to Source It

Buyers searching for bulk chocolate or wholesale chocolate usually need one of two things, and it pays to separate them before a single sample ships. The first is chocolate made to your recipe — couverture or dark chocolate produced in volume and delivered under your specification or your brand. The second is the ingredients to make it yourself: cocoa liquor and cocoa butter for a manufacturer that already runs its own refining and conching. El Dulce Origen covers both from the same origin. Our post-harvest processing and manufacturing run in our own certified facility in Cayambe, Pichincha, supplied by a network of around 100 allied farms in Manabí, Esmeraldas and Pichincha, Ecuador.

What we do not do is sell a stock catalogue of finished branded products. There is no warehouse of pre-packed bars, bags of chips or foil coins waiting to be picked. Every bulk chocolate order is either a production run to an agreed specification or a shipment of semi-finished ingredients. Saying this upfront saves a round of samples that would otherwise fail on a format we never listed.

What Couverture Is, and What the Label Requires

Couverture is chocolate with a high cocoa butter content, formulated to flow thinly when melted so it can coat, enrobe, mould and temper cleanly. In the European Union the term is defined by Directive 2000/36/EC: couverture chocolate must contain not less than 35 % total dry cocoa solids, including not less than 31 % cocoa butter and not less than 2.5 % dry non-fat cocoa solids. The United States has no legal category called couverture; instead, 21 CFR Part 163 sets standards of identity such as semisweet and bittersweet chocolate (not less than 35 % chocolate liquor) and milk chocolate (not less than 10 % chocolate liquor).

For a bulk buyer this matters because the word on the invoice has to match the destination market. A "couverture" that meets the EU definition will usually also qualify as bittersweet or semisweet in the US, but the reverse is not guaranteed. We specify the recipe against the market where the product will be sold, not against a generic data sheet.

Bulk Dark Chocolate and Couverture Made to Your Specification

Bulk dark chocolate is the natural fit for Ecuadorian fine aroma cacao. Nacional Arriba beans carry floral notes of jasmine and orange blossom with low bitterness, which survive into a high-percentage dark chocolate far better than a commodity blend. Through our private label and contract manufacturing service, the facility produces chocolate to your recipe — cocoa percentage, sugar type, emulsifier or none — and documents every batch under the same FSSC 22000/GMP system used for our own exports. Finished chocolate from this line already reaches customers in Japan, France and the United Kingdom.

A typical production relationship starts with a recipe and volume review, moves to a small trial batch that confirms flavour, viscosity and packaging, and then scales to recurring runs. The trial is where couverture-specific parameters get fixed: the fat content that sets fluidity for enrobing, the particle size that sets mouthfeel, and the tempering behaviour your line needs.

Chocolate Chips, Bars and Coins in Bulk: What We Can and Cannot Promise

Searches for bulk chocolate chips, chocolate chips bulk, bulk chocolate bars and chocolate coins bulk describe finished formats. They are legitimate needs, but each depends on specific moulding or depositing equipment. We do not publish these formats as stock items. Whether a given shape can be produced for your run — a bake-stable chip, a tablet, a moulded coin — is confirmed during the private label review against the equipment available at the time, not promised on a web page.

Bake-stable chips deserve a note, because they are not simply small pieces of couverture. A chip meant to hold its shape in a cookie is formulated with less cocoa butter and a higher viscosity than a couverture meant to flow over a praline. If your application is bakery inclusions, say so at the start: it changes the recipe more than it changes the price.

Cocoa Liquor and Cocoa Butter for Manufacturers Making Their Own

Many wholesale chocolate buyers already own a refining line and only need the origin. For them we supply natural cocoa liquor (100 % cacao mass, with a cocoa butter content of roughly 52-54 %) and natural cocoa butter, pressed from our roasted liquor. Liquor is the backbone of any couverture recipe; butter is the lever that adjusts fluidity. Buying both from one origin keeps the flavour profile consistent from batch to batch. We supply natural products only. There is no alkalized liquor and no deodorized butter in our range. If a formula depends on a neutral-flavoured butter, that component should come from a processor that deodorizes, and the liquor can still come from us.

Minimum Order, Samples and Formats

The commercial minimum order for cocoa liquor and cocoa butter is 250 kg. Technical samples of 1-5 kg for laboratory evaluation are provided case by case. Volume then scales to pallet, LCL and full container. Private label runs are sized in the recipe and volume review, because the minimum depends on the product and the packaging format. Any capacity figure published on this site is a ceiling on what can be produced, never a floor on what a buyer must order.

Quality Documentation: Cadmium, Bloom and Batch Records

Cadmium is present in all cacao; there is no cadmium-free chocolate. What matters is the limit in the destination market. Under Regulation (EU) 488/2014, chocolate with 50 % or more total dry cocoa solids may contain up to 0.80 mg/kg of cadmium, and milk chocolate with less than 30 % solids up to 0.10 mg/kg. On request, each lot can be analysed by ICP-MS, alongside heavy-metal, pesticide and microbiological panels, each with its own cost and lead time.

Bulk chocolate also has to survive the trip. Incoterms, Logistics and Price

We sell FOB Guayaquil for sea freight and FOB Quito (Tababela) for air freight. Freight, insurance and inland movement at destination are on the buyer's account, so the buyer chooses the forwarder and the port. Chocolate and couverture need temperature-controlled transport; the specification of the container is part of the order, not an afterthought.

We do not publish prices. Chocolate is built on cocoa, and cocoa is priced against the exchange; recipe, cocoa percentage, format, packaging, destination and volume all change the answer. A number from memory would be wrong for both sides.

When to Build Your Own Line Instead
