Industrial Applications of Cocoa Nibs

Nibs are the bean with the shell removed, which makes shell content and particle size the two numbers that decide whether a lot works in your line. Beyond that, the roast profile determines whether you get chocolate depth or the floral, fruit-forward character that fine aroma is bought for.

Cereal, granola and snack manufacturing

Nibs deliver crunch and cocoa taste without added sugar, which is why they appear in low-sugar and high-protein formats. Low residual shell is what keeps the mouthfeel clean, and it is the specification worth writing into the contract.

Bakery and confectionery inclusions

As an inclusion, nibs hold their texture through baking better than chocolate chips, which soften. A consistent particle size is what stops them settling to the bottom of a batter or blocking a dosing head.

Craft chocolate and grinding

Origin & Traceability

Our cocoa nibs are produced by winnowing and crushing sorted Nacional Arriba beans at our Cayambe processing facility, in Pichincha. The raw material is sourced directly from our network of allied farms in Manabí, Esmeraldas and Pichincha. We apply a gentle convection roasting profile to develop chocolate notes without burning the bean surface, preserving the floral characteristics of the crop.

Food Safety

Our Nacional Arriba cocoa nibs are regularly tested for heavy metals in certified laboratories. EU Regulation 488/2014 establishes a limit of 0.80 mg/kg for dark chocolate with >=50% cacao and 0.60 mg/kg for cocoa powder. An ICP-MS laboratory report per batch is available on request.

Not as a microbiologically safe product. Below roughly 45°C there is no meaningful reduction of microbial load, and shipping such a lot exposes the buyer to a detention at customs. What we do offer is a gentle 75°C / 20-minute thermal step: it does not roast the bean or alter the sensory profile, and it leaves the lot fit for export. Where a low-thermal-impact process is required, it has to be discussed and agreed on its technical merits.
What is the maximum shell content in your nibs?
We guarantee a shell content of less than 0.5% by weight, complying with international food standards and preventing wear on industrial processing machinery.
Are your cocoa nibs allergen-free?
Yes. Our nibs are processed on a dedicated production line used exclusively for pure cacao, free from traces of soy, wheat, dairy, and nuts.
Can we sign annual volume contracts with fixed pricing?
Yes, we offer annual supply contracts with fixed pricing to help you secure raw materials and hedge against international cacao market volatility.
What is the shelf life of the nibs once the package is opened?
We recommend consuming the nibs within 6 months after opening the inner polyethylene liner, keeping it tightly sealed between uses.
Do you supply raw nibs processed below 45°C?
Not as a microbiologically guaranteed product. At around 45°C there is no meaningful reduction of microbial load, so a lot sold that way can be detained on arrival. If your formulation genuinely requires minimal thermal impact, that has to be assessed as a technical question — a supplier who simply says yes is transferring the risk to you.
Why does residual shell content matter so much?
Shell affects mouthfeel, it concentrates contaminants differently from the cotyledon, and it distorts analytical results. It is one of the few nib parameters worth writing explicitly into a purchase specification instead of assuming an industry default.
Can we specify our own roast profile?
Yes, within what the plant can reproduce consistently. The roast is the main lever between a chocolate-forward and a floral, fruit-forward nib, so we treat it as part of the specification and confirm it before a first commercial run.
Are your nibs allergen-free?
Nibs themselves are pure cacao, but allergen status is a statement about the whole production and handling environment, not about the ingredient alone. We answer that against the documentation of the specific lot rather than with a blanket claim.
